The Glera grapes are harvested and undergo a manual cleaning and selection process. The grapes are then fermented off the skins under soft pressure. The second fermentation procedure takes place where the wine is fermented in stainless steel tanks. The alcohol content, once fermentation is complete, is 11.5%, and the sugar residue is 8-9 grams per liter.
