The Taurasi wine is made from the Aglianico grape. The wine is one of the prestigious types of wine consumed. The grape is grown in the region of Campania. The name also belongs to a community where the grapes are produced. The vines are cultivated in the highlands where the soils are volcanic with limestone. The wine undergoes a long aging process before it is ready for consumption.Winemaking process
The grapes are harvested in early November. They go through the manual selection and cleaning and are left to cool in a cellar for 12 hours at a temperature of eight degrees. They undergo pre-fermentation cold maceration. The pre-fermentation process optimized the color and aroma extraction and takes 21 days. After cooling, the grapes are pressed to release the must. The first pressings are separated and undergo clarification by the use of a cold pressing system through sedimentation. Afterward, the wine is fermented in stainless steel vats under controlled low temperatures ranging between 15-18 degrees. The cool temperatures help in preserving the aroma of the grapes. After the processes are complete, the wine is fined in French oak barriques for one to two years. The Taurasi wine is then bottled and allowed to age in the bottle for an additional 12 months.Wine characteristics
The wine has a deep ruby red color. The aromas are slightly complex with hints of ripe fruits, spices, and dried prunes. The oak might have an effect on the wine giving it a smoky scent. The wine is full-bodied and is high on tannins. The taste leaves an intense feeling in the mouth. Decanting the wine and allowing it to age gracefully has its rewards.Serving suggestions
Taurasi wine should be served at a temperature of around 20-22 degrees. It offers an excellent accompaniment to roast meat, salami, game, and full flavored cheeses.
