AREA PRODUCED: hillside vineyards in the Alpone valley and north-eastern part of Soave
HARVEST: mid-late September
TECHNIQUE: after making a careful selection of the best clusters of the Garganega grape, we lay them out on trays in a well-aired room, where they are left to dry until December. The grapes are constantly checked and sorted right up until they are pressed. The grapes are vinified first by lightly pressing them, then the must is left to slowly ferment in stainless steel tanks
TYPE: Sweet dessert wine with a golden yellow colour; intense, with a pleasant, fruity bouquet where raisins and candied fruits are the main aromas
FOOD PAIRINGS: perfect for drinking alone. It can be paired with dry baked goods, Vicenza chutney or dark chocolate, but it is also excellent alongside strong-tasting, herb-infused cheeses
SERVING TEMPERATURE: 12-14°C in a typical dessert wine glass – small, with a wide body and narrow opening
