Nebbiolo, also known as Nebieul, is an Italian variety of red grape wine which is produced in the Italian region of Piedmont, which is located in the north-west part of the country. In order to produce the best possible quality of Nebbiolo wine, producers plant Nebbiolo on 150 to 300 meter high slops which face either south or south-west and that are naturally sheltered from the wind which could damage the growing of the grapes.
Most Nebbiolo wine makers use a mixture of old and modern techniques to produce this type of wine. The old system consists in a maceration period which goes from twenty to thirty days and the use of large botti size barrels while the more modern approach consists in a maceration period which can last from seven to ten days and fermentation temperatures which can vary from 28 to 30 °C which make it possible for the aroma and the flavors to stay pretty much intact.Organoleptic properties
