Nebbiolo, also known as Nebieul, is an Italian variety of red grape wine which is produced in the Italian region of Piedmont, which is located in the north-west part of the country. The grapes used to make this wine are usually harvested in Autumn, especially in October. In order to produce the best possible quality of Nebbiolo wine, producers plant Nebbiolo on 150 to 300 meter high slops which face either south or south-west and that are naturally sheltered from the wind which could damage the growing of the grapes.
Most Nebbiolo wine makers use a mixture of old and modern techniques to produce this type of wine. The old system consists in a maceration period which goes from twenty to thirty days and the use of large botti size barrels while the more modern approach consists in a maceration period which can last from seven to ten days and fermentation temperatures which can vary from 28 to 30 °C which make it possible for the aroma and the flavors to stay pretty much intact.Organoleptic properties
The taste of Nebbiolo can be described as a mixture of some violet hints which are definitely stronger after the wine has aged enough. The taste is elegant, smooth and full-bodied which makes it a favorite among wine lovers and people who are not used to drinking wine extremely often but that are attracted to the softness of its flavor.Serving suggestions
There is a big variety of dishes which can be improved when they are accompanied with a glass of Nebbiolo wine. In fact, most people like to drink this type of wine with most dishes, but the best suggestions include a large variety of meat dishes (especially those which are spicy or particularly salty since the taste of the wine itself is very smooth) as well as seasoned cheeses and some popular and traditional Italian recipes such as lasagna.
