The zone’s climate permits the thrust of the ripening since it is characterized by a favorable dry microclimate due to the exposure and height. The presence of winds it’s conclusive precisely for this, and they constitute an ideal thermo-regulator for the thermo excursion, essential for the development of the various fragrances. The grapes are left to macerate in fermenting vats of steel with a thermoregulation implant and of wine pressing in order to keep the caps of the marcs immerse in the liquid to be able to achieve a better extraction of the tannins with a more elegant result. A small amount of the wine is fined in barrels of second passage to provide a better equilibrium with sweet notes, but without eliminating the wine’s personality. Fragrance: Strong forest scents of red fruits, specially blackberries and blueberries. Pairings : Thanks to its tannin presence, this wine is easily coupled with strong courses, or roasted meats. It should be served at a temperature of 16°-18° C.
