Franciacorta DOCG is a sparkling wine whose production is allowed in the province of Brescia. It takes its name from the area, Franciacorta. The Franciacorta key feature is that the only permissible method of fermentation is the traditional or the second fermentation in the bottle (the one used by 3 centuries in Champagne), also called classic method. The EU recognizes the Franciacorta along all'Asti and Marsala, (the only 3 Italian cases) the possibility of indicating no other qualifying terms: thus, it is more correct / legitimate to say "Franciacorta" and not "Franciacorta sparkling wine", just like for centuries, for Champagne. Furthermore, it was the first DOCG exclusively dedicated to the classic method in Italy. The specification provides three versions of Franciacorta DOCG sparkling wine: white, rosé, satèn. Franciacorta - Chardonnay and / or Pinot Nero, allowed the use of Pinot Bianco up to a maximum of 50%. Features: Re-fermentation in the bottle for at least 18 months of aging on the lees; processing and maturation continue for at least 25 months after the harvest. Bottle pressure between 5 and 6 atmospheres. Tasting notes: Pale yellow with golden reflections, fine and persistent, typical bouquet of fermentation in the bottle, hints of bread crust and yeast enriched with delicate notes of citrus and nuts (almonds, hazelnuts, dried figs). Savory, fresh, fine and harmonious. Franciacorta Satèn - Chardonnay (prevalent) and Pinot Blanc up to a maximum of 50%. Features: The soft palate comes from a careful selection of base wines and the lower bottle pressure, under 5 atmospheres. It only produces a Brut wine. Tasting notes: Perlage fine and persistent, almost creamy. pale yellow color also intense, with greenish colors, nuanced but distinct aroma of ripe fruit accompanied by delicate notes of white flowers and dried fruit also toasted (almond and hazelnut). A pleasant flavor and freshness fusing with softness reminiscent of the delicate sensations of silk. Franciacorta Rosé - Pinot Noir (minimum 25%), Chardonnay, Pinot Bianco (maximum 50%). Features: The Pinot Noir grapes ferment in contact with the skin for the time necessary to confer to the wine the desired hue. It is produced using wine-based Pinot Noir, vinified in rosé pure (100%), or comes from a blend of base wines with Chardonnay and / or Pinot Blanc. Tasting notes: The Pinot Noir gives this Franciacorta a body and a special force in addition to the typical aromas of the grape. Franciacorta, Franciacorta Saten and Franciacorta Rosé can acquire more personality, complexity and sophistication, with longer periods of maturation and aging. This is the case of Millesimato Franciacorta and Franciacorta Reserve. Franciacorta Millesimato - Features: The word "year" indicates that all wine comes from a single vintage (minimum 85%). The Millesimato exists when the vintage is particularly qualitative and is enhanced with the most long aging than assembly (non vintage Franciacorta). They must pass at least 37 months after the harvest because it is sold. Tasting notes: iI-vintage Franciacorta have sensory and gustatory personality that reflects an obvious climatic features vintage and quality of the grapes from that particular vintage. Franciacorta Reserve - Features: The Franciacorta Vintage Reserve are the particular qualitative excellence to fully express their olfactory and gustatory qualities, must remain in yeast contact for many years. The Regulations will require at least 5 so the Franciacorta Riserva is released to the market after at least 67 months (five years) after the harvest.
