Etna is a DOC established by decree of 27/09/11 and includes wines produced in the province of Catania area which gives the soil and climatic characteristics, different from the rest of the Region. Climate variability and soil is very relevant, so as to draw many different environments for features and conditions, however, favorable to wine production. The soils are of course mainly of volcanic origin. The vineyards mostly grow between 300 and 900 meters, but in some areas particularly suited climb as high as 1,100 m. The vines are native: the main red grape are Nerello Mascalese and Nerello Cappuccio, among those white grapes prevail Caricante, Cataratto and Minella. The wines must meet, at the time of 'release for consumption, with the following characteristics: "Etna" white with a pale yellow color, sometimes with golden hues; a delicate and distinctive aroma; Dry to the palate, fresh, harmonious; "Etna" white top a very pale yellow color with greenish reflections; the delicate scent and distinctive; dry mouth, fresh, balanced, soft; "Etna" red ruby color with garnet with aging; an intense, characteristic; a dry, robust warm, full, harmonious; "Etna" red color with reserve: ruby red with garnet with aging; intense aroma, characteristic; a dry scent, strong warm, full, harmonious; "Etna" rosy pinkish color tending towards ruby; an intense, characteristic; a dry, harmonious; "Etna" sparkling wine with a fine and persistent froth, a color, for the rosé type: rosé drain with reflections ruby with aging; for the white type: pale straw yellow, with golden reflections with aging; an intense and distinctive aroma, with delicate hint of yeast and a full, harmonious, with good persistence; from brut to extradry
