Catarratto wine is characterized by high acidity which positively influences the aromatic freshness and flavor; on the olfactory level the scent of white flowers is the most widespread. The taste is fruity and dry, but it does not compromise the keeping. Spread mainly in the province of Trapani are known two varieties, black common and glossy white. The shiny white Catarratto vinified alone, gives a pale yellow wine load, almost yellow-amber. The scent is often slightly marsaleggiante. In the mouth it is dry and not very cool, unless it has been subjected to an early harvest. In this case, the olfactory notes prevalent are more delicate, fruity and floral.
